Thai Fish Sauce
Ingredients:
- 7 Chillies
- 4 - 8 Cloves of Garlic
- Bunch of Coriander Leaves
- Juice of 1 Lemon/Lime
- Fish Sauce, roughly same quantity as lemon juice
- Pinch of Salt
- Pinch of Sugar
- Crush garlic, coriander, chillies and salt with pestle and mortar.
- Then add lemon juice and sugar.
- The amount of fish sauce and lemon juice needs to be carefully balanced.
Add fish sauce slowly, testing at each stage whether the sauce is too sour or too
salty.
If it is too sour, keep adding fish sauce. If it is too salty, add a bit more lemon
juice.
This sauce can be stored in the fridge for at least a week.
