Thai Fish Sauce

Ingredients:
Before Crushing
Ready Sauce
  1. Crush garlic, coriander, chillies and salt with pestle and mortar.
  2. Then add lemon juice and sugar.
  3. The amount of fish sauce and lemon juice needs to be carefully balanced.
    Add fish sauce slowly, testing at each stage whether the sauce is too sour or too salty.
    If it is too sour, keep adding fish sauce. If it is too salty, add a bit more lemon juice.
This sauce can be stored in the fridge for at least a week.

Very Spicy

This sauce works magic wonders, especially if you have it with Thai-Style grilled fish.
It also goes very well together with Thom Kha Gai, especially if you like your food spicy.
Generally the sauce is sprinkled on boiled rice, but you should experiment which way you like it best.
Caution: Not for wimps!
